Carbonaretti to piedilucana
Lake Piediluco has always been generous to fisherman and they appreciate its kindness honoring its fruits the fish in the best way possible: on the table.
One of these, the perch, which has become the emblem of the kitchen of the lake is the “carbonaretto alla piedilucana” dish. The perch are cooked on high heat until the outside is charred from this the name “ carbonaretti”. They are then gutted and served with a special green appetizing sauce.The lake so takes an entirely different flavor.
